Porcupine Meatballs
Even though you may think that their name implies this would be something from our hunting days, it is quite the contrary. Porcupine Meatballs are just a meatball cooked in a tomato sauce with rice. They are a versatile dish that are tneder, full of flavor, easy and delicous!

- 1 pound Hamburger
- 1/4 cup Raw Rice
- 1 ea Egg
- 1 tbsp Parsley
- 2 tbsp Chopped Onion you can substitute fresh onion for dried
- 1/2 tsp Salt
- dash Pepper to taste
- 1/4 cup Tomato Soup reserve remaining soup for sauce
Sauce
- 1 10 oz can Tomato Soup remaining soup from meatballs
- 1 tsp Worchestershire Sauce
- 1/2 cup Water
Serve over
- Angel hair pasta prepared according to packaging
- -or- Rice prepared according to packaging
Mix ingredients for meatballs (hamburger, rice, egg, parsley, onion, salt, pepper, and 1/4 cup coup) in a mixing bowl.Form into balls and place in a frying pan with a little oil. Fry until browned in the middle.Mix remaining soup with water and worchestershiresauce. Pour sauce over meatballs, bring to a boil, cover and trun heat down. Simmer for 30 minutes, rotating meatballs often.Cook angel hair pasta or rice according to packaging.Serve meatballs over pasta or rice.Enjoy!
