Today, I would like to share one our families favorite low calorie meals with you: Quiche
To be honest I was a little afraid to try baking a Quiche because it was something I had never tried before. I grew up in a family where we raised our own beef and potatoes in the garden so that’s what we ate. That was what I knew.
I love to cook so this was something to challenge my seasoned beef and potato skills.
I was surprised at how well it baked up and it is something I have come to LOVE. It is simple, doesn’t take a lot of time and everyone in my house will eat it. We put in whatever we have available. The best part is my kids are getting their veggies and we are staying within our low-calorie goal.
Another plus… we raise our own chickens so this is a great way to use some of those extra eggs
This one is a Ham Quiche
1 frozen pie crust (if you can make your own by all means do it! My life is a little crazy so I default to frozen)
Down side of frozen, part of my crust fell off the edge from getting broken in the freezer.
Poke a few holes in the pie crust and bake at about 250 for 8-10 minutes just to get your pie crust unfrozen, and lightly brown. Times vary by stove, so keep an eye on it!
In the mean time mix together in a bowl:
6-8 medium eggs
1/2- 1 cup diced ham
1 cup cole slaw salad mix
4-6 broccoli florets (more or less depending upon how much broccoli you like in it)
Once your pie crust is ready, pour the egg and veggie mixture into the pie crust
Bake at 325 for 45 minutes to 1 hour or until a knife comes out clean
(I use a gas stove so I bake at a lower temperature for a little longer time to keep the crust from burning before everything is cooked all the way through)
The baking portion took a little bit of practice and patience for me- I usually check it at 45 minutes and judge whether to bake it longer from there.
The time depends a little on how many eggs and veggies you put into it as well.
I get 6-8 servings from one dish.
